I was reading around about doing this today and just knew there had to be a better way than using the "Location" aspect of the Windows Vista/7 user folders. I've also tried doing this using Symbolic Links, which worked great except for AppData and ProgramData - This guide sorts that out too. There was also the problem of programs that have hardcoded C:\Users and C:\ProgramData into them - This addresses that too.
<?xml version="1.0" encoding="utf-8"?>
<unattend xmlns="urn:schemas-microsoft-com:unattend">
<settings pass="oobeSystem">
<component name="Microsoft-Windows-Shell-Setup" processorArchitecture="amd64" publicKeyToken="31bf3856ad364e35" language="neutral" versionScope="nonSxS" xmlns:wcm="http://schemas.microsoft.com/WMIConfig/2002/State" xmlns:xsi="http://www.w3.org/2001/XMLSchema-instance">
<FolderLocations>
<ProfilesDirectory>E:\Users</ProfilesDirectory>
<ProgramData>E:\ProgramData</ProgramData>
</FolderLocations>
</component>
</settings>
<cpi:offlineImage cpi:source="wim:I:/sources/install.wim#Windows 7 PROFESSIONAL" xmlns:cpi="urn:schemas-microsoft-com:cpi" />
</unattend>

Onto the next step.

It's invaluable if you have more than one HDD and it's a better and more complete solution than simply relocating the folders since appdata is also moved and it works for any new users added after the install.

Nah, not really. If you want to make your own ISO you can set it up so it does this install and you don't need to sysprep, then all you need to do is install ShellLinkExtension, reboot into safe mode, and create the symlinks (need to safe mode it in order to delete ProgramData). This way, if you create a new account everything is placed onto whatever drive automatically without any hassle. So, if you ever got a girlfriend you could make her an account to use your PC and all her user folder stuff will be on your chosen drive. Just remember to delete your child porn, otester. That could end badly for you.
serious why not just use a mount point?

Basically the same thing, but this works well for registries and such and can be setup on the first boot/during an install, hassle free. I'll be you could create a similar XML file for that too, but I'd never thought of that to be honest.

dunno, my way sounds easier. go in safe mode, copy folder, set up mount point and reboot. done. can even do it without reinstalling....

That way involves creating partitions, though, innit? I'd have to resize a drive with some unused space, create a logical partition and then point that to a folder on another drive. This way just moves it to another drive. You can do it without reinstalling, also, just involves using sysprep. I didn't test that method though. There's also the Profile locator software which I haven't tested either.

in a way yeah, but that's easy enough anyway. far easier than reinstalling windows and the fuck around that follows

True dat, like I said, though, you can do it without reinstalling. But it is a bit of a fuck around. I didn't even consider using mountpoints, though. That's the Linux-thinking in you coming out.

Also, as for SSD drives. Y'all must be rich fuckers because space > speed for me. That said, since doing this to my C drive Windows takes up 29GB of space (inc program files, etc), I gave Ubuntu 60GB of the same drive as well (and it uses about 5GB) so a 60GB SSD drive would do me, in theory.
tbh I'm just jealous of anyone who has the monies to buy one :(
