It is a good dish. You will make it. You will eat it. You will love it......or else....I will cut your damn head off. From the Mustard Seed restaurant in Spokane, Washington U.S.A....I give you Chicken Osaka.
Ok.....Normally I am yelling about politics and the general disarray of this country and the world but even I, yes I, have to do something to get my mind off all of this bullshit. So I cook. No, not meth, but food. One of my favorite dishes when I go to lunch is Mustard Seed's Chicken (or shrimp) Osaka. If you've had it you know what I mean when I say, "Fucky Sucky Joe! This is good shit!" If you have not had it, just imagine the perfect mix of lemon, mustard and ginger. Really this recipe is pretty easy.....just follow me......First cook yourself some Jasmine Rice.....I will assume you know how to cook rice.......
There are two sauces you need to make ahead of time.
* Both recipes make quite a bit so you will have leftover sauce.( I cook for multiple people)
Ginger Dressing (You will be cooking the chicken with this)
1/2 Cup Salad Oil
1/4 Cup Orange Juice
2 Tablespoons Balsamic Vinegar
2 Tablespoons Grated Ginger
1 Tablespoon Soy Sauce
1 Tablespoon Honey or Dijon Mustard
1 Tablespoon Sugar
1 Clove Garlic, minced (optional)
2 Scallions, chopped (optional)
Combine all ingredients in a blender or salad mix shaker. I use a stick blender. Note: If you do not have a stick blender buy one, you won't regret it.
Osaka Sauce (The Dipping Sauce)
3 Tablespoons Soy Sauce
1/2 cup Lemon Juice
2 Teaspoons Coleman's Dry Mustard (Spend the money buy Coleman's *No Chinese Mustard)
3 Tablespoons Sugar
2 Tablespoons Sesame Oil
2 Tablespoons White or Rice Vinegar
1/3 Cup Salad Oil
Blend this together or in a salad dressing shaker....OR A STICK BLENDER!
Now that you have these two sauces made. Let's get to the cooking
You will need..............
1 1/2 to 2 Lbs. Chicken (or shrimp)
3 Tablespoons Salad Oil
2 to 3 Slices of Fresh Ginger (or grated ginger)
1/2 Lemon, Juiced and Zested
Chop up your chicken into bite sized pieces. Heat up your wok or if you do not have a wok use a deep pan.
Add your 3 Tablespoons of Salad Oil.
When the oil just starts to smoke add Chicken, Lemon juice, zest and Ginger.
Get the Chicken slightly browned then add Sauce No. 1 (the Ginger Dressing) Just enough to coat.
Heat through. *You can add more ginger dressing if you like, just don't overheat or sauce will break*
Serve that shit up on a bed of your rice.
Pour Osaka dipping sauce into shotglasses and maybe make a quick Asian Slaw.
